Ingredients
- 6 tbs vegetable oil
- 2 medium onions
- 3 medium potatoes
- 1 tsp turmeric
- salt and red pepper to taste
- a small bunch of fresh coriander
Method
Step 1
Peel, halve and finely chop the onions. Peel and cut potatoes into 1 inch cubes. Pick the coriander leaves and finely chop the stalks.
Step 2
Heat the oil in a pan and fry the onions over a medium to high heat until nearly brown.
Step 3
Add the potatoes. Stir and fry until the potatoes are well coated with the oil.
Step 4
Add 3½ to 4 cups water, coriander stalks and turmeric. Season with salt and pepper.
Step 5
Bring to a boil, then turn down the heat and simmer with the lid on until the veg are cooked and soft.
Step 6
Check the curry regularly to make sure it’s not drying out, and extra water if necessary.
Step 7
Put the pan into the preheated oven for another 20 to 30 minutes.
Step 8
Serve with fresh naan.
